{In The Kitchen} Two-Ingredient Breakfast Pumpkin Muffins

I’ve been eating these at least a few times a week for the past two months and I haven’t gained weight so I’m going to tell you about them. These are my pumpkin muffins. I love them because they are two ingredients:

Cake mix + pumpkin puree = Delicious muffins you can stuff in your face just 20 minutes later

You dump the two ingredients in a bowl and then mix it for a couple minutes. You can do it by hand or use a hand mixer (much easier). The batter is going to be very, very thick, but that’s okay.

See, a four-year-old can make these muffins. You can too. I like to use Betty Crocker’s French Vanilla cake mix (can always find it on sale for $1.50 or less) and a can (any brand) of pumpkin puree. I’ve heard other people like to use chocolate cake mix or a spice cake mix but I’m not adventurous enough to try that. I literally just started eating pumpkin two months ago, give me time to warm up!

What do they taste like? Um, cake with pumpkin puree in it. The cake mix sweetens the pumpkin puree, but not to the point where you feel like you’re eating birthday cake for breakfast (although, is that a bad thing?). With the chocolate mix, I’ve heard you can’t taste the pumpkin (and even if you can, apparently chocolate and pumpkin go well together?).

It’s almost so easy I hesitate to call it a recipe because it’s just two ingredients and two steps. But I like this as a breakfast item because it’s quick and pumpkin is full of vitamins. I did the calculations and if you make 12, each muffin is less than 120 calories. So go ahead and eat two. LOL

  2. One of the members at the gym brought me some of these. She lost a lot of weight. She used Sugar free chocolate devils food cake mix and pumpkin. They are very yummy and moist!
