{In The Kitchen} What We’re Eating November 26 to December 2

Thanksgiving took a lot out of me. LOL. I cooked for two days straight in preparation and I’m still (three days out) kind of at the point where I don’t want to look at another pot or pan for at least another week.

But these people in my house, they get hungry, you see. So cook I must. Ugh.

Here is this week’s meal plan. I’m trying to get away from “Thanksgiving-y” types of food because I’ve had enough stuffing and turkey to last me a loooong time.

Monday (My birthday! So Mama is NOT cooking!) 

My husband asked what I wanted for my birthday dinner and I said, Chipotle. I’m so easy to please.

Tuesday

Mongolian Beef with brown rice and broccoli

Wednesday + Thursday

Baked spaghetti with cream cheese. I’m making a 9×14 pan’s worth, so there will be enough for two days. I’ve got to remember to do this more often. No need for me to cook every day!

Friday

Parmesan Crusted Chicken 

Saturday

My husband turns 32 on this day so I will be taking him out to dinner to celebrate! :)

Sunday

Beef-and-bean taco casserole. I’m going to have the kids help me make this in order to increase the chances that they’ll eat it. *wink*
