{In The Kitchen} What’s For Dinner: October 21-October 28

This week I am going to challenge myself because I am NOT going to go to the store. I don’t want to spend ANY money on groceries until October 29. We have a pretty stocked refrigerator and freezer and theoretically I *should* be able to get through the week with no problem.

So here we go:

MondayChicken enchiladas. I might have to go take a pregnancy test because I simply MUST have these at least once a week. The cravings are insane. And it doesn’t help that I ALWAYS have the ingredients (chicken, corn, black beans, cheese, onions, peppers, tortillas).

Tuesday - Swedish meatballsAnother meal I’ve been craving for months.

Wednesday -  I punked out on the pizza made with a cauliflower crust a couple weeks ago, but the ingredients are still there, so I WILL attempt it this week. Please pray it works out!

Thursday – Ranch chicken tenders + roasted cauliflower

Friday - Shrimp pesto pasta (Not sure how I’m going to make this, but I think it’s going to be delicious!)

SaturdayChicken stir-fry w/ brown rice.

Sunday - Beef stew
