{In The Kitchen} What’s For Dinner: October 8-14

Whew! Last week still has me spinning. We had doctor’s appointments, field trips, catching up on work I missed while I was on my trip, thesis interviews and meetings and class! Insane!

I would like to cook a few more “nice” meals this week but still manage to keep it simple. I’ll try to do some prep this weekend to help me out during the week. As always, I’ll post my grocery totals to see how I do! This week I’m aiming for less than $50!

MondaySlow cooker chicken parmesan 

Tuesday – Beef and bean enchilada casserole

Wednesday – BBQ chicken wings and roasted cauliflower

ThursdayGarlic chicken with tomato cream penne

FridayCauliflower crust pizza (I’m curious as to how this will turn out, but all the reviews say it’s delicious. I’ll keep the number to our local pizza place on standby. LOL)

SaturdayShrimp linguine  (I’m using the Barefoot Contessa recipe but will add white wine to cut back on the butter. Mmm, butter.)

Sunday – Stuffed cabbage rolls
