{In The Kitchen} What We’re Eating – September 17-23

I followed last week’s menu pretty well, but toward the end of the week I started to lose my desire to cook and was itching to call for pizza or go out to eat! But I held strong and now I still have that $40 in my pocket. Whew!

This week should be a little calmer than last week. But I need to make sure I’m paying attention to what’s for dinner so I’m prepared ahead of time! I plan on hitting the store to buy a few items and yes, $30 is my goal. I bought a bunch of peppers last week and I plan on using them up in every dish this week. I also need to use up some potatoes so that explains the homemade French fries. I bought four bone-in chicken breasts and cooked those so I’ll have shredded chicken to use in the jambalaya pasta, as well as the enchiladas on Friday PLUS two other meals in the future.

So far, I’ll say menu planning has saved me about $50, particularly because I’m not going to the store as much and when I do, I’m sticking to what’s on the list. Here’s what’s on my menu for this week:

Sloppy joes with homemade fries

Wednesday

Sausage and bean soup (Pictured above – I don’t know why I love this so much, but I do. It’s like heaven, especially once it starts getting chilly outside.)

Thursday

Roasted chicken with Parmesan orzo

Friday

Chicken, corn and black bean enchiladas (Remind me to share the recipe with you!)
