{In The Kitchen} What We’re Eating – September 10-16

This week was really hard because I have a feeling it’s going to be ultra busy. I’ve got orientation for my son’s school, a big event for a client is on Thursday, and sometime between Wednesday and Friday is my son’s first day of preschool but I still don’t know when that is.

Ahem.

So I’m trying to (as always) plan ahead and take the work out of dinner. Although, I must have been in denial about the seasons changing because fall is almost here and this is my favorite, favorite season. Cakes and pies and chili and thick soups and a warm house! Ahh!! I will try not to go crazy though and budget carefully for all my baking expeditions. (I made a sweet potato cheesecake last year that I am STILL drooling over!)

Anyway, here is my meal plan for the week. You’ll see I added breakfast and lunch so you can see how I try to budget for those meals as well. I’ll try to add more detail as the weeks go by. So far I’ve gotten great feedback on these menus so please ask questions or post your own menus in the comments!

Monday 

  1. Breakfast – Omelet muffins (I add potatoes and cheddar cheese to mine. I make a big batch on the weekend and then eat them all week long.)
  2. Lunch – Leftovers
  3. Dinner – Crockpot Bowtie Pasta

Tuesday 

  • Breakfast – Cereal + smoothie
  • Lunch – Leftovers (If no leftovers, then turkey sandwiches and pretzels)
  • Dinner – Chipotle steak burrito bowls (Been trying to make this for YEARS.)

Wednesday

  • Breakfast – Omelet muffins
  • Lunch – Turkey sandwiches + fruit
  • Dinner – BBQ spaghetti (My husband made a big batch of homemade BBQ sauce for Labor Day and it is DELICIOUS over pasta. Don’t knock it until you try it!)

Thursday

  • Breakfast – Cereal + smoothie
  • Lunch – Leftovers
  • Dinner – Out (I have a big event for work and the kids will be with my parents)

Friday

  • Breakfast – Omelet muffin
  • Lunch – Turkey sandwiches + yogurt
  • Dinner – Sweet and sour chicken with rice

Saturday

  • Breakfast – Breakfast potatoes (I just pan-fry potatoes with onions and lots of black pepper and garlic.)
  • Lunch – Leftovers
  • Dinner – Fried chicken wings + green beans

Sunday

  • Breakfast – Pancakes!
  • Lunch – Leftovers
  • Dinner – Beef stew

  1. You know, I really find much more joy in cooking now that I plan our meals. It really does make our lives easier and helps me save a good bit of money.

    BBQ sauce in spaghetti is the greatest mixture ever thought of!
