{In The Kitchen} Couldn’t-Be-Simpler BBQ Chicken Pizza

Two weekends ago, I decided to make pizza. I love all the neighborhood places around us, but we had my nephews over (two teen boys with big ol’ appetites) and I wasn’t trying to spend $40+ to feed everyone. I figured, I’ll just make it myself!

Only problem was that I didn’t have any pizza dough. “How hard could it be to make it yourself?” I thought. After searching for a few recipes, I found one that seemed simple enough.

Ingredients:

  • Store bought pizza dough (or you can make your own with just six ingredients – and one of them is water!)
  • BBQ sauce
  • Bell peppers
  • Onions
  • Cooked, shredded chicken (get a rotisserie chicken)
  • Cheese

My 16-year-old nephew was over and he asked me to give his mom the recipe. I was touched! The great thing is it isn’t so much a recipe as it is assembly.

First, make the dough (exact measurements at the link). I mixed water, yeast, sugar and oil in a bowl and let it sit for 10 minutes. Then I added flour, salt and some oregano. I kneaded it for 10-12 minutes, sprinkling with flour to keep from sticking to bowl. Then I spread it out on the pan and baked it for about 10 minutes at 350 degrees.

Then you add the toppings. I spread a good amount of BBQ sauce on top, then added bell peppers, shredded chicken and then cheese. Bake it for about 10 minutes or until the cheese is melted to your liking. That’s it! Pretty simple.
